National Hot Breakfast Month | Freezer-Friendly Breakfast Recipes - Faithful Provisions (3)

Did you know that February is National Hot Breakfast Month? My kids’ favorite things to eat for breakfast are hot items: pancakes, waffles, eggs, and toast. While making a hot breakfast takes more time, I’m always on the lookout for ways to make recipes a little easier. Sometimes I can prepare breakfast the night before, like I do with my Baked Oatmeal. I also like to take a Kitchen Prep Day and make ahead items like Pancakes, Waffles, or breakfast burritos and freeze individually.     We love homefries and I really don’t want to start from scratch in the morning as they take too long. I found that I can peel and cube potatoes and boil them until they are just beginning to get tender which is usually 10 minutes. Drain and pour onto a large baking sheet to cool to room temp. Then I put just enough into a ziploc freezer bag for them to be in a single layer when the bag is laid flat. Stack them in the freezer and they are all ready to be quickly browned in a skillet in just 10 minutes or so. I tried flash freezing but they stick to the baking sheet, so I tried them on wax and parchment aper and they were still stuck fast so the freezer bag works best. These potatoes are absolutely delicious! I often prep a batch when I have potatoes that are starting to sprout and need to be used up. Last week I did about 8 pounds so we are set for awhile.

    We do French Toast Sticks at our house. They freeze great! Just heat them up & dip in maple syrup … yum! And I love that you can add veggie puree.

    Ingredients:
    30 slices whole wheat bread
    .25 cups butter, melted
    8 eggs
    .33 cups sugar
    1.33 cups milk
    2 teaspoons vanilla
    1 teaspoon cinnamon
    .5 cups butternut squash puree (could also use sweet potato, pumpkin or acorn squash)

    Directions:
    Preheat oven to 350 degrees. Slice bread slices into thirds. In a large bowl mix all ingredients except sliced bread (I use the blender!). Spray a cookie sheet with cooking spray. Dip bread pieces, one by one, in the batter until coated and then place on the cookie sheet. Bake for 30 minutes turning over half-way through to ensure even cooking on both sides. When done, remove to cooling rack. Serve or freeze.

    Freezing Directions:
    Allow to cool on cooling rack completely or place on a cool cookie sheet and place in freezer for 10-15 minutes or until partially frozen (flash freezing). Place in Ziploc freezer bag and place in freezer until ready to use. To serve: microwave 30-45 seconds.
