One way to make sure my kiddos eat their veggies is by serving them with creamy dips. The problem, of course, is that so many dips are filled with unnecessary sugars and preservatives.

My solution is to make homemade creations instead, which I am sure doesn’t come as much of a surprise.

While making homemade condiments may sound daunting, many are actually super simple to whip up when needed. That is definitely the case for this avocado garlic aioli.

It’s so creamy and has a beautiful depth of flavor. Plus, the avocados give it the most beautiful green color.

Whether you are looking for a veggie dip or something to slather on your sandwich, this aioli is a delicious choice.

What is an Aioli?

Aioli means “garlic” and “oil.” It’s these two ingredients that make up a traditional aioli that you may find in some Mediterranean dishes. It’s made by emulsifying raw garlic and olive oil using a mortar and pestle (source).

If you look up aioli in the Merriam-Webster dictionary, though, you’ll find it is actually defined as a garlic flavored mayo (source). That is because most aiolis today are made up of the same ingredients as mayo, plus some.

Mayo is an emulsion of eggs and oil. So, add a little garlic, some form of acid, and salt, and you get what we recognize as an aioli.

Great way to use up homemade mayo– Instead of using eggs and oil separately in this recipe, I use my homemade avocado mayo. Since homemade mayo does not last as long as store bought, this is a great way to use up any extra you have before it goes bad.

Healthy ingredients– Many store bought dips or condiments in general come loaded with preservatives and extra add ins. This aioli is only made with whole, simple ingredients.

Ingredients

Mayonnaise – I use my homemade avocado mayo (find the recipe here). If you use store bought, I recommend finding one that uses an avocado oil for its base rather than highly processed oils like canola or soybean oil.

Avocado – It should be ripe.

Lime Juice – If you don’t have any lime juice, you can substitute with lemon juice. I just love the flavor lime gives this!

Garlic – A key ingredient to any traditional aioli.

Combine all ingredients into a food processor and pulse on high until smooth and creamy, scraping the sides down with a spatula as needed.

Salad dressing– Take your salad up a notch by using this as a delicious and refreshing dressing.

Creamy spread– Delicious on your favorite sandwich, made with sourdough bread of course!

What is an aioli sauce made of?

Traditionally, aioli is made up of just two ingredients – olive oil and garlic. Most aiolis today also include eggs and some form of acid, such as lemon or lime juice.

Is aioli a mayonnaise?

Not technically, although an Aioli is sometimes used as a term to describe mayonnaise that includes additional flavoring. A traditional aioli is just olive oil and garlic. Whereas, mayo is made up of eggs and oil.

However, today’s aiolis commonly include eggs as well. You could argue that an aioli is simply a fancy term for flavored mayo.

Is eating aioli good for you?

Aiolis are high in fat thanks to the oil and eggs (in my recipe’s case, the mayo). So, if you are watching your fat in take, keep this in mind. However, if using good quality ingredients, you’ll find aiolis can be packed full of nutrients.
For example, garlic has vitamin C and vitamin B6 and has been shown to help boost your immune system (source). Avocados are also full of vitamins and omega-3 fatty acids (source).

How do you store aioli?

Avocado aioli will not keep its color for very long. For ultimate freshness, use it within a couple of days. Store in the refrigerator after mixing together in an airtight container.
