In the Pittsburgh region, sandwiches of "ham barbecue" or "barbecued chipped ham" are commonly served at home and available at lunch counters. The chain Isaly's helped to popularize chipped chopped ham.
Chipped chopped ham was created by a Pittsburgh-based brand called Isaly's (pronounced "EYE-zlees"). During its heyday from the 1930s to the 1980s, Isaly's Dairy Stores were all over Western Pennsylvania and Ohio. Isaly's had it all: a small grocery store, a deli counter, and even an ice cream parlor.
Ham is a cut of pork that's typically cured and preserved, although it's also sold fresh. It's rich in protein and several beneficial nutrients. However, regularly eating processed meats like ham may increase your risk of certain cancers.
For the typical brined and smoked boneless ham, plan for each person to eat between 1/3 and 1/2 pounds. You never know how much ham your guests will want to eat the day of your holiday gathering, but this leaves enough for everyone to enjoy their holiday meal's main dish.
A bone-in ham makes for a great visual presentation on the table, and is perfect for carving. And it's not just there for show — a ham bone is an excellent starter for flavorful soups and stocks. Boneless hams are easier to carve, and better suited for sandwiches. There's no real difference in flavor or texture.
The iconic chipped ham (sometimes marketed as “chipped-chopped ham”) still is available and popular. The brand was recently sold to Conroy Foods in O'Hara Township, which — as “Isaly's LLC” — is starting to revive several flavors of Isaly's ice cream as well.
The Klondike Bar product line is now owned by Unilever. There are at least three Isaly's still in operation in southwestern Pennsylvania in the areas of West View, Turtle Creek, and East Allegheny (city neighborhood of Pittsburgh), all retaining most of the classic interior.
Once you've properly wrapped and frozen your leftover ham, you can keep it in a frost-free freezer for up to 2 months without loss of flavor. If you store it longer, it'll develop freezer burn, which is the meat drying out at the edges. The longer it stays in the freezer, the more freezer burn it will develop.
What Is a Spiral Ham? A spiral ham is, in a nutshell, a bone-in ham that's been sliced with a special spiral-slicing machine, which carves the meat into perfectly thin slices while allowing it to retain its show-stopping centerpiece shape for optimal presentation.
By shaving (chipping) the meat very thin, the ham is more tender and has more flavor than if it were sliced more thickly. In Western PA, Northern West Virginia, and Eastern Ohio (aka the Ohio Valley), this slicing process is known as "Pittsburgh Style."
Chipped chopped ham starts with a formed ham loaf (chopped ham, pork trimmings, herbs, spices) which made it cheaper than better cuts and “post-war popular” in the 1940s. The chopped loaf then gets shaved paper-thin on a slicer, which gives the meat a decidedly buttery feel on the palate.
