Corned Beef Hash is usually considered a breakfast food, many times with fried eggs added to the top. If you wanted to add eggs to this, go for it! But, this hash is delicious on its own, as-is, with the meat and potatoes. It could definitely be enjoyed for any meal of the day if you ask me!

Hash Ingredients

Corned Beef:Look for cooked corned beef hash. You could get some thicker slices from your local deli or use canned corned beef, which is also already cooked.

Potatoes:For hash, I prefer waxy potatoes like Yukon gold potatoes.

Onions:A common ingredient in corned beef hash recipes is onions; I used a yellow onion.

What is Corned Beef Hash?

Hash is generally a dish made with meat, potatoes, and onions fried in a pan. The word hash comes from the French word ‘hacher’, which means to chop. Hash is a great way to use up leftover ingredients from veggies to meat and can be made with almost anything you have on hand.

How to Prepare the Potatoes

I boiled the cubed potatoes before adding them to the skillet. This made the potatoes on the softer side. You could boil them for less time for a firmer potato in the hash. If you want crispier potatoes, you could pan-fry them first. Or, you could even roast the potatoes in the oven.

Can I Use Frozen Potatoes?

Sure! If you want to use frozen potatoes or hashbrowns, those would work fine in this recipe (and save you some prep time). Just follow the package instructions when cooking the potatoes.

Variations to Corned Beef Hash

This simple recipe can easily be adapted to make it with your favorite ingredients. Here are some options:

  • If you don’t have any corned beef, try another meat like pastrami or roast beef.
  • Add vegetables like mushrooms, bell peppers, carrots, or your favorite vegetables.
  • Top the hash with some shredded cheese.
  • Use a different kind of potato. Russet and sweet potatoes would both work!

Corned Beef Hash is a hearty breakfast or brunch made in a skillet with corned beef, potatoes, sauteed onions, and garlic.

Ingredients

  • 3 tablespoons unsalted butter
  • pounds cooked corned beef, cut into ¼-inch cubes (about 4 cups)
  • 4 large Yukon gold potatoes rinsed, peeled, and cut into ¼-inch cubes (about 4 cups)
  • 1 large yellow onion, finely diced (about 1 cup)
  • 1 teaspoon garlic, minced
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • fresh parsley, for garnish

Instructions

  • In a large pot, bring water to a boil. Add cubed potatoes and boil for about 10 minutes.

  • Drain the potatoes, pat them dry, and set aside.

  • In a large skillet over medium-high heat, melt butter. Add onion and cook for 3-4 minutes.

  • Add garlic and cook for a minute, or until fragrant. Then, add salt and pepper.

  • Finally, add the corned beef and boiled potatoes. Lightly press down the hash into an even layer.

  • Cook, undisturbed, for 6-7 minutes, or until browned. Flip and continue cooking for 10-15 more minutes, turning occasionally to brown evenly.

  • Garnish with parsley. Serve warm with fried eggs and toast.
