What is a wedding/birthday without cake! This is an easy recipe that can be made at home at anytime when the craving strikes. I am using an Electric pressure cooker (EPC) that is very efficient. Imagine using just kes 2 worth of electric tokens for baking half a kg cake!!!

Ingredients

10 minutes preparation+ 45 minutes baking

Approx 10 people

  1. 400 g self raising flour
  2. 200 g margarine
  3. 200 g sugar (preferably granulated sugar)
  4. 4 large eggs
  5. Essence (flavour of your choice) or juice of a freshly squeezed lemon

Cooking Instructions

    In a bowl mix in the margarine and sugar till fluffy

    Add in your eggs mixed with essence one by one

  3. 3

    Add in the flour and mix to a smooth consistency (should not be too runny or too thick)

  4. 4

    Pour in the mixture/batter in the electric pressure cooker pot and pressure cook for 45 minutes. Test for readiness by pricking the center of the cake with a fork/knife/toothpick (Should come out clean when pulled out)

    Remove from the electric pressure cooker pot and airdry on a rack to cool. Slice a big chunk and enjoy :)
