Dear Reader-

Sometimes I am late to the ball game… ya know when everyone else (or at least a lot of people) seem to know something awesomely cool and then you just discover it…

Enter Cake Mix Cookies into my life…

As a daughter of a former cake decorator, I was ALWAYS in awe of the cake mix aisle… all the flavors… all the choices…

I was always shocked that brides would always choose chocolate or white cake over flavors like cherry chip or orange…

Anyhoo…

Cake Mix Cookies… now, I am no stranger to the concept of using a cake mix in cookie batter… like I told you last year while making these Santa’s Favorite Cake Mix Cookies, Puddie actually made me a batch of Cake Mix Cookies the night he asked me to be his girl 😉

However, I had no idea that there were multiple awesome recipes out there that utilized the versatility of the standard cake mix!

So, today, I thought I’d share the 3 I have recently found…

I think that is why I LOVE Cake Mix Cookies… there are tons of flavor choices at your fingertips…

This year, Miss Add and I found two additional cake mix recipes in Gooseberry Patch’s Christmas Cookie Jar3 Christmas Cookie Recipes Using Cake Mixes - GOODEness Gracious (7)Cookbook and whipped them up in four different flavors!

First up, we were THRILLED to find Cake Mix Cut-Out Cookies!

(Edited to Add: About half of the readers that use this recipe rave about it… and the other half complain with issues of the dough sticking. Use at your own risk. We love this recipe, but we also use real butter and add flour as needed.)

I mean what Christmas is complete without cookie cutters?

And this recipe made whipping them up a snap.

We chose to make Funfetti and Strawberry Cut-Outs.

You start with your cake mix…

Add 1 stick of slightly softened butter (NOT margarine or light butter), 2 eggs and 1 t vanilla

Now I scraped my bowl and put the dough in a covered bowl in my fridge for a couple hours for easy rolling and cookie cutting…

*EDITED TO ADD: Some readers are reporting that the dough is getting too sticky for them. I am wondering if humidity could be a factor. Regardless, after testing for more user-friendly instructions, I would recommend that dough spends at least one of those hours in the freezer for best results. Also, cake mixes have reduced in size recently and the smaller mix may affect your results. Usethis recipeto make your cake mix the right size.

I just went ahead and baked my other cookies while I waited.

But let’s pull a fancy cooking showmaneuverand pull that already set dough out of the fridge and continue shall we?

Roll it out on a floured surface.

*EDITED TO ADD:Cake mixes have reduced in size and it may effect your results. Usethis recipeto make your cake mix the right size.

Grab that eager 4 yr old and get to cutting out them cookies!

For all those folks who LOVE that “Cake Batter” flavor in their sweets lately… the Funfetti mix gives you that flavor in a cookie and the kids just love it!

Place on lined or greased cookie sheets and decorate with sugars, sprinkles or cinnamon candies…

Then bake at 350 degrees for 12-15 minutes.
